Ingredients

  • 1 ripe avocado

  • Lemon juice (to taste)

  • Salt and pepper (to taste)

  • Whole-grain or low-carb bread slices

  • 1 large egg

  • 1/4 cup diced bell peppers (any color)

  • 1/4 cup diced tomatoes

  • Optional: Fresh herbs for garnish

  • 2 oz smoked salmon

  • 1/4 cup sliced cucumber

  • Chives for garnish

  • Optional: Zest of lemon for extra flavor

Instructions

  1. In a bowl, mash the avocado with lemon juice, salt, and pepper until smooth.

  2. Toast the bread slices until golden and crispy.

  3. For the Classic Sunny-Side-Up, cook one large egg sunny-side-up, season with salt and pepper, and place it on one slice of toasted bread. Optionally sprinkle with fresh herbs.

  4. For the Veggie Delight Scramble, sauté diced bell peppers and tomatoes until softened. Beat and add one egg to the pan, season with salt and pepper, and scramble. Place the scramble on another slice of toasted bread and top with optional fresh herbs.

  5. For the Smoked Salmon & Avocado, layer smoked salmon and sliced cucumber on the third slice of toasted bread, top with a generous amount of avocado mash, and garnish with chives and optional lemon zest.
