Ingredients
2 salmon fillets (about 6 oz each)
4 eggs
1 tablespoon of olive oil
1 lemon, sliced
1 teaspoon of dried dill
Salt and pepper to taste
Fresh chives, chopped for garnish
Instructions
Set your oven to 375°F (190°C).
Place the salmon fillets on a lined baking sheet. Drizzle with olive oil and season with salt, pepper, and dried dill. Ensure the seasonings are evenly spread over the fillets. Top each fillet with lemon slices.
Bake in the preheated oven for 12-15 minutes, or until the salmon is fully cooked and flakes easily with a fork.
Remove the baking sheet from the oven. Using a spoon, create small wells in each salmon fillet and crack an egg into each well.
Return the baking sheet to the oven and bake for an additional 8-10 minutes, or until the eggs are cooked to your desired firmness.
