Burrito with Almond Flour

Ingredients
2 almond flour tortillas (choose low-carb or diabetes-friendly)
2 large eggs
1/2 cup black beans, drained and rinsed
1/2 cup bell peppers, diced
1/4 cup red onion, finely chopped
1/4 cup cherry tomatoes, diced
1/4 cup avocado, sliced
1/4 cup shredded cheese (cheddar or a diabetes-friendly alternative)
1 tablespoon olive oil
Salt and pepper to taste
Optional: fresh cilantro for garnish
Optional: hot sauce or low-sugar salsa for extra flavor
Instructions
Heat a skillet over medium heat and add olive oil. Add the diced bell peppers and red onion, sautéing until softened, about 3-4 minutes.
Add the black beans to the skillet and cook for an additional 2-3 minutes.
Push the veggies and beans to one side of the skillet. On the other side, scramble the eggs until fully cooked.
Warm the almond flour tortillas in a dry skillet or microwave according to package instructions.
Assemble the burritos by distributing the scrambled eggs, veggie-bean mix, cherry tomatoes, and avocado slices evenly between the two tortillas.
Top with shredded cheese and season with salt and pepper.
Optionally, add fresh cilantro and a drizzle of hot sauce or salsa.
Roll up the tortillas to form burritos.
