Ingredients
1 tablespoon olive oil
1 block (14 oz) extra-firm tofu, ready to crumble
1 small onion, finely chopped
1 bell pepper, diced
1 cup cherry tomatoes, halved
2 cloves of garlic, minced
1 teaspoon turmeric powder
1/2 teaspoon cumin powder
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Instructions
Heat a skillet over medium heat and add the olive oil.
Add the chopped onion to the skillet and cook until it softens for about 3 minutes.
Crumble the tofu block into the skillet. Cook for 5-7 minutes until the tofu starts to turn golden.
Mix in the diced bell pepper, cherry tomatoes, and minced garlic. Cook for another 3-4 minutes until the vegetables are tender.
Sprinkle the turmeric and cumin powders over the mixture, stirring well to combine.
Season with salt and pepper, mixing for another 2-3 minutes.
Top off with freshly chopped parsley.
Serve your tofu scramble hot, perfect on its own or with toast or tortillas for a satisfying meal. Enjoy your cooking adventure!
