Ingredients

  • 1 tablespoon olive oil

  • 1 block (14 oz) extra-firm tofu, ready to crumble

  • 1 small onion, finely chopped

  • 1 bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • 2 cloves of garlic, minced

  • 1 teaspoon turmeric powder

  • 1/2 teaspoon cumin powder

  • Salt and pepper, to taste

  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat a skillet over medium heat and add the olive oil.

  2. Add the chopped onion to the skillet and cook until it softens for about 3 minutes.

  3. Crumble the tofu block into the skillet. Cook for 5-7 minutes until the tofu starts to turn golden.

  4. Mix in the diced bell pepper, cherry tomatoes, and minced garlic. Cook for another 3-4 minutes until the vegetables are tender.

  5. Sprinkle the turmeric and cumin powders over the mixture, stirring well to combine.

  6. Season with salt and pepper, mixing for another 2-3 minutes.

  7. Top off with freshly chopped parsley.

Serve your tofu scramble hot, perfect on its own or with toast or tortillas for a satisfying meal. Enjoy your cooking adventure!
