Ingredients
1 cup of almond flour
1 mashed banana
2 large eggs
1 cup of milk (dairy or plant-based)
1 scoop of protein powder (choose your preferred flavor)
1 teaspoon of baking powder
1/2 teaspoon of vanilla extract
A pinch of salt
Coconut oil or cooking spray for greasing
Instructions
In a mixing bowl, combine the almond flour, mashed banana, eggs, milk, protein powder, baking powder, vanilla extract, and salt. Mix thoroughly until smooth.
Preheat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil or cooking spray.
Pour about 1/4 cup of batter for each pancake onto the skillet. Watch for bubbles on the surface as a sign to flip the pancakes. Cook until the other side is golden brown.
Continue cooking the remaining batter, adjusting the heat as necessary to prevent burning.
Serve the pancakes hot with your choice of toppings like fruits, nuts, or a sprinkle of cinnamon.
