Ingredients
Cooking spray or olive oil for greasing
6 large eggs
1 cup baby spinach, finely chopped
1/2 cup cherry tomatoes, diced
1/4 cup feta cheese, crumbled (use reduced-fat if desired)
1 tablespoon fresh chives, finely chopped
Salt and pepper to taste
Optional: Dash of hot sauce or salsa for extra flavor
Instructions
Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or a dab of olive oil.
In a mixing bowl, whisk the eggs until well beaten.
Add the chopped baby spinach, diced cherry tomatoes, crumbled feta cheese, and chopped chives to the eggs. Stir until evenly mixed.
Season the mixture with salt and pepper. If desired, add a dash of hot sauce or salsa for additional flavor.
Pour the egg mixture into the greased muffin cups, filling each about two-thirds full.
Bake in the preheated oven for 15-20 minutes, or until the egg bites are set and slightly golden on top.
Let the egg bites cool for a few minutes before removing them from the muffin tin.
Optional: Garnish with extra chives or a sprinkle of feta cheese before serving.
Serve the egg bites warm, optionally with a side of fresh greens.
