Salmon with Broccoli & Sweet Potatoes

Ingredients
4 salmon fillets (about 6 oz each)
2 tablespoons sesame seeds
1 tablespoon olive oil
Salt and pepper, to taste
Lemon wedges, for serving
1 bunch purple sprouting broccoli or tenderstem broccoli
2 cloves garlic, minced
2 large sweet potatoes, peeled and diced
1 tablespoon unsalted butter or olive oil
1/4 cup unsweetened almond milk (or milk of choice)
Instructions
Preheat the oven to 400°F (200°C).
Pat the salmon fillets dry and coat them with sesame seeds. Heat olive oil in a skillet over medium heat, sear the fillets for 2 minutes on each side, then transfer to the oven. Bake for 10-12 minutes until cooked through.
Steam or boil the broccoli for about 3-4 minutes until tender. Heat another tablespoon of olive oil in a pan, sauté garlic for 30 seconds, then add the broccoli. Season with salt and pepper.
Boil or steam the sweet potatoes until tender. Mash them with butter or olive oil and almond milk. Season with salt and pepper.
Serve the salmon on a bed of mashed sweet potatoes, with the broccoli on the side.
Garnish with extra sesame seeds and serve with lemon wedges.
