Ingredients
1 lb (about 450g) chicken tenders or boneless, skinless chicken breasts, cut into strips
1/2 cup almond flour
1/4 cup sesame seeds
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Cooking spray or olive oil
Juice of 2 lemons
Zest of 1 lemon
1 tablespoon olive oil
1 tablespoon honey or sugar substitute
1 teaspoon cornstarch (optional, for thickening)
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
In a bowl, combine almond flour, sesame seeds, garlic powder, onion powder, smoked paprika, salt, and pepper.
Coat each chicken strip in the almond flour mixture, ensuring even coverage. Arrange the coated chicken strips on the prepared baking sheet.
Bake in the preheated oven for 15-20 minutes, until the chicken is golden brown and fully cooked.
While the chicken bakes, prepare the lemon glaze. In a small saucepan, combine lemon juice, lemon zest, olive oil, and honey. Heat over medium until warm. If using cornstarch, mix with a small amount of water and add to the saucepan to thicken the glaze.
Once the chicken is done, drizzle the lemon glaze over the chicken tenders.
Serve the chicken tenders with a low-carb side dish or a fresh salad.
