Ingredients
2 tablespoons of olive oil
1 red bell pepper, diced
1 yellow bell pepper, diced
1 zucchini, sliced
1 cup of cherry tomatoes, halved
4 large eggs
Salt and pepper, to taste
1 teaspoon of smoked paprika
Fresh herbs like parsley or chives, chopped, for garnish
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in an ovenproof skillet over medium heat.
Add red and yellow bell peppers. Cook for 3-4 minutes until they start to soften.
Add zucchini and cook for 3 more minutes until tender.
Make four wells in the vegetables and crack an egg into each.
Add cherry tomatoes around the skillet.
Season with salt, pepper, and smoked paprika.
Bake in the preheated oven for 10-12 minutes, until egg whites are set but yolks are still runny.
Garnish with fresh herbs before serving.
Serve hot, directly from the skillet for a nutritious and flavorful brunch option. Enjoy your meal!
