Ingredients
1 tablespoon olive oil
1 onion, finely chopped
2 bell peppers, diced (any color)
1 can (15 oz) chickpeas, drained and rinsed
200g (about 7 oz) firm tofu, crumbled
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
Optional: Avocado slices for garnish
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook until softened, about 3 minutes.
Add the diced bell peppers and cook for another 5 minutes, or until tender.
Stir in the chickpeas, crumbled tofu, minced garlic, ground cumin, and smoked paprika. Mix well.
Season with salt and pepper. Continue to cook for 5-7 minutes, allowing the flavors to blend.
Optional: If adding eggs, make wells in the mixture, crack the eggs into the wells, cover, and cook to your preferred doneness.
Garnish with fresh cilantro and optional avocado slices.
Serve this vibrant, protein-packed skillet hot, and enjoy a hearty and healthful meal.
